Il Pavone Barbera D'Alba Superiore

The aging is done in French oak barrels, in which the malolactic fermentation takes place before the end of the winter. The wine stays in wood for around one year, followed by 6 month in bottle. On the palat, good volume and body. Soft tannins and great acidity that gives a long persistence. Final aftertaste of blackberry jam. A delicious red wine to pair with any pastas or meat base.
Il Pavone Langhe Arneis
Il Pavone (peacock) a noble animal in Langhe Albesi where the grapes are grown. The wine is kept in stainless steel tanks where the fermentation takes place at a temperature of 18-20 °C. The wine is kept in steel tanks for 4-5 months at low temperature in order to improve the aromatic content and the "volume" of the wine. The wine is subject to cold stabilization process and bottled before summer. This wine has a nice acidity level, giving the wine freshness and persistence. The taste is fresh, flavorful, fragrant and lightly mineral.
Il Pavone Moscato D'Asti
