Il Pavone Langhe Arneis
Il Pavone (peacock) a noble animal in Langhe Albesi where the grapes are grown. The wine is kept in stainless steel tanks where the fermentation takes place at a temperature of 18-20 °C. The wine is kept in steel tanks for 4-5 months at low temperature in order to improve the aromatic content and the "volume" of the wine. The wine is subject to cold stabilization process and bottled before summer. This wine has a nice acidity level, giving the wine freshness and persistence. The taste is fresh, flavorful, fragrant and lightly mineral.
Il Pavone Barbera D'Alba Superiore
Il Pavone (peacock) a noble animal from the area of Langhe Albesi where the grapes are grown. The wine is fermented in temperature control with frequent pumping. The aging is done in French oak barrels, in which the malolactic fermentation takes place before the end of the winter. The wine stays in wood for around one year, followed by 6 month in bottle. On the palat, good volume and body. Soft tannins and great acidity that gives a long persistence. Final aftertaste of blackberry jam. A delicious red wine to pair with any pastas or meat base.
Il Pavone Moscato D'Asti
Il Pavone (peacock) a noble animal in Langhe Albesi where the grapes are grown. This wine is released by a soft pressing of whole grapes, fining and filtration of the must prior to the fermentation in pressure tanks at a low temperature. our Moscato d’Asti is ready for consumption just a few days after bottling. A pleasantly sweet taste well-balanced with fruit and acidity featuring honey notes and just-picked grapes is what you will find in a glass of Moscato D’Asti.
Il Pavone Langhe Nebbiolo
Il Pavone (peacock) a noble animal in Langhe Albesi where the grapes are grown. Temperature controlled fermentation (28/30 °C).
The maceration lasts around 12 days. The malolactic Fermentation takes place in wood. The ageing is done in French oak barrels for around one year, followed by 6 months in bottle. Langhe Nebbiolo is dry a dry, smooth, warm wine great to pair with red meat.

Il Pavone (peacock) a noble animal in Langhe Albesi where the grapes are grown. Vinification in temperature-controlled steel tanks, followed by 24 months in barrel and 12 months in bottle. Overtones of vanilla, spices ,withered roses and underbrush. Tastes dry, but soft, elegant, velvety and well balanced, and is very long-lasting.
